Oatmeal Muffins!

Getting tired of Overnight Oats? Here is a new idea for your morning oatmeal fix!
These muffins are flourless and a great do-ahead! Store these in the refrigerator for five days or freezer for a month or two, for a quick, healthy and portable breakfast!

Lean, Green Quarantine Smoothie!



A girl can only have so many cookies for breakfast before she needs to make some changes!!
If your high-powered blender has only been making frozen cocktails during Covid, try something new! This smoothie is not so great to look at, but it tastes delicious and packs a nutritional punch! A high-powered blender is really a must to smoothly blend all of these ingredients, but if you don’t have one, try defrosting the fruit first.

End-of-Summer “Virtual” Class!




Sadly, it looks like it will be impossible to host in-person classes for the rest of this year! So in the meantime, I will offer a few classes virtually, or my version of virtual.
Sign up for the class for $25 and receive recipe cards by mail and then receive a photo diary of each recipe by email. The photo diary will help you create the menu at home with step-by-step photos and direction. The first class is listed below.

“End-of-Summer Simplicity”- At this point of the quarantine, we are all running out of menu ideas. I hope this menu brings you a little new inspiration, using simple fresh ingredients paired with a few new techniques!
This menu will include: Quick-Marinated Cucumber and Avocado Salad; Zucchini-Corn Muffins; Baked Shrimp and Spanish Chorizo; and Berry Cheesecake Parfaits for a special sweet treat!

Whole-Grain Cookies part two!

I have been experimenting with vegan butter recently and these cookies are the end result. The cookies are made with whole-grains, low in sugar, and only have a third of the saturated fat as real butter. They also happen to taste delicious! Hope you enjoy the recipe!
