Mad about Mediterranean!

Decided to resume classes a week early on August 24 and this first class back just had to be my favorite cuisine, Mediterranean! This menu is bold in flavors yet light on the palate at the same time. This meal is perfect to take you from those summer barbecues back into your kitchen. The menu will include: Homemade Labneh or “Yogurt Cheese” with Pistachios and Honey; Mediterranean Vegetable Stew; Roasted Chicken with Turmeric and Olive Pan Sauce; and Lemon-Pine Nut Biscotti for a sweet ending.

Dates for the new menu will be posted Monday morning – August 2. This new class will start August 24. This week I am taking reservations for private groups of 8. Please visit my website August 2 to see available August/September dates. And for the safety of all, please only sign up for a class if you have been vaccinated.

If you are interested in taking this class with several friends, please respond early next Monday, and I will make every effort to get you into the class together. As always, please try to give a couple of date choices when making your request.

Also, if you want to book this class for a private group of 8 please contact me by Friday.

And remember, if you want to reply to me do not hit reply, email me directly at amy@cookingwithcare.com.

Fruit Desserts!

Summer is the perfect time for fruit desserts! These two no-recipe, no-bake desserts are an easy and delicious way to end a meal. The first is just a small scoop of gelato in a freestone peach halve with a drizzle of real maple syrup and a sprinkling of toasted almonds. The second is a small piece of cheese (I like gorgonzola) on a fig halve with a drizzle of honey and a sprinkling of chopped pistachios.

Enjoy, and look out for brand new class menu dates posted on August 9th and starting classes on September 1st!
