“End-of-Summer Cool-Down!”

End the summer with this healthful meal. This mostly do-ahead menu is perfect for al fresco entertaining, but easy enough for weeknight cooking! This delicious menu will include: Cucumber-Yogurt Soup; Rainbow Whole-Wheat Couscous Salad; Zahtar-Crusted Salmon; and Lemon-Toasted Coconut Tart for an extra special sweet ending.
