1/2 c old fashioned oats
1/3 c *toasted unsweetened coconut flakes
1/4 c ground flaxseed
1/4 c dark chocolate mini chips
1/4 c peanut butter
1/4 c honey
1/2 tsp vanilla
1/4 c toasted sesame seeds or
2 Tbsp unsweetened cocoa powder or
1/4 c *toasted, finely chopped walnuts (favorite)
Combine oats, coconut, flax and chocolate; add peanut butter, honey and vanilla and mix well. Chill in the refrigerator for 30 minutes. With a small scoop or 1 Tbsp measure, scoop and roll mixture into balls. Roll balls in sesame seeds, cocoa powder, or walnuts to coat. Store in the refrigerator. Makes about 20.

*Toasting Coconut: 325 degree oven for 3-5 minutes; Walnuts: 350 degrees for 8-9 minutes
