Hope you will enjoy this soup as much as we have been enjoying it! It is healthful, satisfying and just makes you feel good inside and out. And isn’t that exactly what we need right now!
The soup as written is low-carb, but if you want to add a bit more fiber and texture, I like to add some cooked barley and lentils. The cooked barley and lentils can be added so easily with this (see below) product from HEB.
