Watermelon Lemonade

What do you do with a subpar watermelon? Make watermelon lemonade!!

Thought I would share this “no-recipe” recipe in case you too come home with that not-so-great melon.

In my blender, I added the entire small seedless melon cubed up (about 8c), along with 2/3-3/4c of fresh lemon juice. I blended it, tasted it to see if it needed any sweetener, and then added a touch of agave.

This drink is a refreshing treat, but it can easily be turned into a watermelon margarita with the addition of some tequila!

“Healthy Brunch” class coming soon!

Power up with a healthy brunch, lunch or breakfast for dinner! This meal has many do-ahead options to make for easy entertaining or easy mealtime prep. This delicious menu will include: Strawberry-Avocado Salad with Poppyseed Dressing; Homemade Savory Granola; Mushroom-Spinach Crustless Quiche; Smoky Herb-Roasted Baby Potatoes; and for a sweet ending Carrot Cake Energy Truffles.

Dates for the new menu will be posted Monday morning – May 9. This new class will run through June on select dates. This week I am taking reservations for private groups of 8.
