Late April usually brings San Antonio Fiesta, but sadly we will miss it again this year. Tortilla Chicken Soup is a simple pantry-staple soup that can bring a little fiesta to your kitchen!
This soup comes together with pantry staples and chicken thighs (or breast) from my freezer. It only takes about 30 minutes, and is hearty and healthful. I usually serve it with some cut up tropical fruits, like papaya, pineapple and mango.
